A little over a year ago I dismissed Bimber as just another expensive upstart whisky, but I'm glad I gave them a second chance. The new Re-Charred Oak Casks, their second ever release, reaffirms their reputation as a distillery to watch.
While I get the idea behind the name, I still find 'The ONE Whisky' a bit pretentious. Yet, I quite like what they've done actually. Proper balance, enough depth of flavour. Yeah, can't really fault it.
There are plenty of original bottlings from The English Whisky, but Blackadder is the only indie bottler with expressions from this English distillery. Today's review is of a 7yo that has matured in a Sauternes wine cask.
To be honest, I've never really felt the need to explore whisky from St George's Distillery. But turns out they seem to be pretty good at making whisky.
